I am converting my server box from win2k pro to redhat. I am NO expert at linux by any means but i figure this is a good time to learn. How difficult is it to set up the UT2K3 server up on a linux box?

It's actually pretty straight forward. Just remember to modify the .ini files in /root/.ut2003/System when you are setting up shop provided, of course, that you aren't specifying the ini file in the startup command and you installed as root.
Depending on the box, you also might want to consider not running XF86 at the same time as your ucc server. And don't forget to firewall that sucker :)
